Koshari Guy

Ayman, a Seattle local with a heart as warm as his cooking, is the mastermind behind the culinary adventure you're about to experience. With a rich tapestry of cultures woven into his heritage, Ayman has always had a passion for food that goes beyond "just food". It's an art form, a language of love, and a way to connect with people.

Driven by a desire to introduce Seattle to a world of flavors they hadn't yet experienced, Ayman started a culinary quest. His mission? To create vegetarian dishes that were not only delicious but also packed with protein. ​

Ayman's journey began humbly at local markets, where he teased taste buds with his Koshari. Word of his food spread like wildfire, and soon, the demand for his signature Egyptian bowl grew exponentially. Recognizing the need for a more permanent home, Ayman partnered with the beloved Salt & Sugar Cafe in Ballard.

 

Now, from Tuesday to Saturday, between 3pm and 9pm, you can try Ayman's gastronomic masterpieces. Behind the scenes, Ayman's wife, Amani, is the creative one who brought his vision to life through his website. She's the mastermind behind the online experience that complements the delicious food, ensuring that every aspect of the Middle Eastern vegetarian street food  journey is unforgettable.
